The French Side of Vietnamese with Corinne Trang

After a thousand years of Chinese rule came one hundred years of French colonization. For this reason, Vietnam’s cuisine is influenced in technique and ingredients by both, yet distinctly different. In this workshop we’ll approach Vietnamese cuisine with a hard focus on dishes with a heavy French influence. 

On the menu: Braised Duck a l’Orange with a caramel and fish sauce base, Banh Xeo Crêpes, which are derived from the classic French crêpe, but made with a coconut milk batter and stuffed with a popular Chinese culinary combination of shrimp and pork, a side of Stir-Fried Pea Shoots to balance out an otherwise rich menu, and Beignets de Banane Flambées with rice alcohol and sprinkled sugar for dessert!

ABOUT THE CHEF

She has written for numerous publications including Saveur, Food & Wine, Fine Cooking, Islands, Gourmet, Cooking Light, and Bon Appetit, and has taught and lectured internationally.
