Sourdough baking may seem complicated, with so many variables that can affect the outcome. In this workshop we’ll learn one master dough recipe and use it to make bread, rolls, pita, pizza, and even bagels–so we see how the ways in which we shape, proof, and bake the dough can change the outcome, while simultaneously increasing your repertoire of homemade baked goods using only one recipe.

Each student will receive some sourdough starter to take home (along with instructions for its care and feeding) and there will be lots of goodies for sampling at the end of class.

ABOUT THE CHEF
Peter Barrett has been a food writer in the Hudson Valley for over ten years. He’s the author and photographer of “Project 258: Making Dinner at Fish & Game” about the James Beard Award-winning restaurant in Hudson, but his primary focus has always been on serious home cooking. He grows, preserves, and cooks as much of his own food as possible—which turns out to be quite a lot—and teaches others to do the same through his writing and classes.
