Learning the proper techniques for efficiently and consistently prepping your ingredients is integral to success in the kitchen. In this workshop led by Corinne Trang, you’ll learn to control your knife through various exercises while developing a 3-course meal–insuring with precision that your ingredients cook evenly, with great visual appeal and little-to-no waste. Come julienne and chiffonade the afternoon away as we pit, mince, smash and chop our way to a gorgeous lunch.
On the menu: Black & Green Olive Tapenade on toast points with pickled red onions, Warm Root Vegetable Chopped Salad with bacon vinaigrette and Roasted Vegetable Tian with Feta. Chef Trang is one of our most rigorous instructors so come prepared to work!
As always, we’ll have on-hand our usual arsenal of Messermeister Elite Santoku and Chef’s knives for students to work with, but we encourage you to bring your own knife from home — as long as it’s sharp — so you best become the master of your own tool. Students wishing to have their knives sharpened in time for the class should drop them off no later than Wednesday, February 20th!

ABOUT THE CHEF
Corinne Trang is the award-winning author of several books including the most recently published “Switch It Up: A Fresh Take on Quick and Easy Diabetes-Friendly Recipes for a Balanced Life” (2017), “Asian Flavors Diabetes Cookbook” (ADA, 2012), “Noodles Every Day” (2009), “Curry Cuisine” (2007), “The Asian Grill” (2006), “A Food Lover’s Companion: Vietnamese” (2006),” “Essentials of Asian Cuisine” (2003), and “Authentic Vietnamese Cooking” (1999), and has contributed to many more including “The Encyclopedia of Food & Culture” (Scribners & Sons, 2006).
