Under the fearless leadership of Corinne Trang, we’ll start by learning how to select, split, salt and drain fresh cabbages. We’ll talk about the kimchi paste, its ingredients and how best to develop balance before we make our own. We’ll learn to prep the daikon, chives and scallions, and the technique for applying spice paste to cabbage quarters, before rolling and stuffing into quart jars that you’ll take home to ferment.
A combination of science and tradition…we’ll discuss the various processes at play with lacto-fermentation and how the methods have changed over time with technology.

ABOUT THE CHEF
