Gâteaux with Tess Kelly, Séraphine Workshops

The time for cake has come, my friends!  Rich, fruity and gorgeously scrummy gâteaux that will earn you rockstar status at potluck gatherings, leaving the rest shivering and teary as they skulk home with their uneaten confetti cakes and Jello moulds.  Baking excellence is well within reach, and Tess Kelly is gonna show you how it’s done.

We’ll start with a Savoy Sponge layered with raspberry preserves bedazzled in a gorgeous armor of slivered almonds before moving onto the pièce de résistance–a soft and dreamy Gâteau à l’Orange baked with fresh OJ that, once baked, we’ll soak in orange syrup, glaze and top with poached orange slices.  Welcome to Château Gâteaux…the House of Cake is in effect, yo!

Tess Kelly is a pastry chef and founder of Séraphine Workshops. She relocated to France in 1986 where she developed her love of French cuisine. She apprenticed under the chef of the pâtisserie she lived above in Paris. Madame Bernard took her under her wing and generously shared the art and love of baking French pastries and French cuisine.

After working for several years in the restaurant business in New York City, she opened Séraphine Bakery in 2014.  Since then Tess has developed hands-on workshops for children and adults. Her desire to feed people and share the art of preparing food is the basis of all of her cooking and baking classes.
