Classic Cocktail Hour Appetizers with Phyllis Segura, Eating It in the Hudson Valley

Imagine if you will,  a cocktail hour spread as timeless as it is delicious…so much so that Julia herself might blush at first glance upon it!

Holiday season is at your front door and whether you’re hosting at home, or want to arrive with “a win” at your next potluck, Chef Phyllis will prepare you for the Ultimate Battle Hors d’Oeuvres.

Bagna Càuda, a fondue-like dip of olive oil, garlic and anchovy dating back to 16th century Piedmont Italy, bubbling away over candlelight with raw veggies for dipping.  We’ll make some buckwheat Blinis and indulge in a tasting of two caviars–Smoked Trout Roe and Hackelback (domestic white sturgeon)–with all the trimmings. We’ll tackle a quick method puff pastry dough and make a Pissaladiere–a highly adaptable pizza-like dish that can be topped with anything, though we’ll go traditional with black olives and caramelized onions.  Then finally, we’ll go deep with some Prosciutto Wrapped Fried Mozzarella Balls.

We are super excited to finally get Phyllis into our kitchen for our first workshop together and this one is gonna be a game-changer!

Award-winning personal and private Chef Phyllis Segura has cooked for people in all walks of life both in the U.S. and E.U. since 2000. She attended the Apicius Cooking School of Lorenzo de’Medici in Florence, Italy; received a James Beard Foundation scholarship; attended various New York cooking schools; and watched her grandmother very carefully.
